Chitosan is a polymer of an amino polysaccharide produced from the shells of lobsters, crabs, shrimp, and crayfish. Each staple has different chitosan content and thus plays an important role in commercial production. Shrimp is considered the main source of chitosan. Chitosan reduces the absorption of lipids from the gastrointestinal tract and is widely used in food supplements.
